My Very Easy Salad

I have found a salad recipe that’s really easy. Actually, I made this one myself after looking at the recipes in magazines and the Internet, only to realize that sometimes easy is the best, especially if you feel you don’t have time to make something decent.
It only has three ingredients: julienned carrots, cubed capsicums or bell peppers of any color you like, and lettuce. You can use Boston and Bibb, Red Leaf and Green Leaf, Fancy Lettuce, or any other type that’s crunchy but not bitter.
You can use this salad on sandwiches, tortillas, I even have this on almost every meal. I got inspired to do this from Flavour, the name of one of the food stalls in the food court of Atrium on Elliot here in Auckland. I almost always buy something from there simply because the food is sooo good every time. What’s interesting is that almost each rice meal they offer have a salad on it. Very interesting indeed, but also healthy to have.
